My New Favorite Salad Addition: Pea Shoots

When I make myself a salad they are usually very GREEN! I add lots of cucumbers, avocado, kale, spinach, and romaine. I am not a fan of tomatoes, peppers, or carrots (in my salad)- but often try to add them in because I know how many vitamins and nutrients they carry.

I am really excited about my new (green!)  salad discovery : Pea Shoots!

They have a fresh soft taste and add a little more crisp to your salad. I cut them up a little so they are easier to eat. You can also add pea shoots to your stir fry, they are good raw or cooked! I would assume they hold more of their nutritional value when eaten raw.
