Overnight Steel Cut Oats: apples, cinnamon, dates and almond milk

I kept seeing overnight oats all over Pinterest and I kept telling myself I would make them. Well, I finally did. I created my own recipe using ingredients I love. I used steel cut oats instead of rolled oats and a Medjool dates instead of honey. The results were awesome. The best part is having something healthy waiting for you in the fridge when you wake up in the AM! 

*I chose to use steel cut oats instead of rolled oats because steel cut oats are less processed. Just be mindful the texture is different than rolled oats, as steel cut oats are a little more chewy and absorb less liquid.

Ingredients:

Serving size 2 (I separated these into two mason jars)

  • 1 cup steel cut oats- rinsed and strained
  • 1 cup homemade almond milk (you can use any kind of milk) here is my homemade cashew milk recipe
  • half of an apple diced
  • 1 Medjool date pitted and cut into small pieces
  • cinnamon to taste
  • slivered almonds for crunch to add on top

Directions:

  • rinse the steel cut oats
  • Cut up half of an apple and 1 date. 
  • Grab two mason jars (or any kind of container with a lid) put 1/2 cup of oats and 1/2 cup of milk in each jar. If you want a little more milk feel free to add. You want to make sure all of the oats are covered by the milk.
  • Separate apples and dates into each jar.
  • Add cinnamon.

Cover the jar and shake. Place the jars in the fridge and wait for your overnight oats to be created. I shook my jars, every now and then, to get it all mixed.

Take out the next day and top with fresh apples and slivered almonds for some crunch!

The only sugar in this recipe comes from the dates and apples... SCORE! The oats are so YUMMY, so tasty, and good for you (great source of fiber!)

Homemade Pumpkin Puree

Now that halloween has passed you may have some extra pumpkins hanging around. I love pumpkin flavored... well anything. I try to avoid pumpkin in a can and love to make it homemade. It is way too easy, and too yummy not to! Follow this easy Alton Brown recipe.

I like to season mine with salt, black pepper and cayenne pepper. If I am getting crazy I'll add in a little goat cheese!  OR I like to make an easy 4 ingredient pancake with it:

  • 1 banana
  • 1 egg (yolk and whites!! this holds the pancake together)
  • 2tbs of pumpkin puree
  • cinnamon/ pumpkin spice

Mix together well. Heat up and grease your pan.  Make your pancakes and enjoy! What do you add into your puree?

Muffin Tin Baked Eggs Recipe: GREAT breakfast for the on-the-go person.

I LOVE EGGS! And I know most of us have busy schedules leaving us little time in the AM to make and prepare an intense festive breakfast. BUT that does not mean you can not eat a HEALTHY breakfast.

This muffin tin baked eggs recipe is pretty awesome. It will take a little prep time, but it will yield about four days worth of breakfast with no fussing in the morning, and you will have a healthy breakfast in no time.

Ingredients:

  • 1 dozen eggs
  • veggies that you wish (I have mushrooms, tomatoes, asparagus and garlic. I added cilantro to the top before I put it in the oven)
  • EVOO
  • muffin tin

Directions:

  • preheat oven to 350
  • Chop veggies small
  • sautee in a pan with EVOO and garlic for about 4 minutes. Not too long because it will cook more in the oven.  Add salt, pepper, any seasoning you like. Set aside.
  • In a large bowl beat all 12 eggs add a tiny splash of water to add some fluff to your eggs.
  • Spray/lightly oil muffin tin. Eggs will stick!
  • Scoop veggies into muffin tin. Top off with egg mixture.

Place egg and veggie mixture  in the oven for 20 minutes or until you see the eggs start to puff up. Take out and LET IT SIT for 5 minutes!! After it has set, take a knife and circle each muffin tin to release the egg. Eat two and then place the rest in a zip lock bag in the fridge (let it cool off first). When you are ready for breakfast take two muffin eggs out of the fridge, pop it in the microwave for 45 seconds and PERECTO, you have a great healthy breakfast!! SO fast, so easy, and soooo delicious. Eggs will stay good in the fridge up to four days. You can store in a plastic ziplock bag or glass container. Try putting a paper towel inside the bag to absorb any moisture eggs release.

Flour-less, butter-less, Oatmeal Banana Muffin Recipe.

This past weekend we were in  NH at Steele Hill Resorts for our friends wedding. It was beautiful and so serene compared to the city. The mountains were breathtaking, and the air was crisp. Even though I was only a couple hours away from home I felt like I was on a destination vacation!

followed by some lounging by the pool. Some of the guys ordered us mudslides (UMM SERIOUSLY AMAZING) and I was introduced to a flour and butter free banana oatmeal muffin made by our friend Kate.

I was so excited to try them. Once I put the muffin in my mouth I knew I had to share the recipe with you!

I decided to try it out myself and put my own twist on it.  I nixed the honey and added chia seeds, cinnamon and cacao powder! It looks good, but was not sweet... at all!

The bananas I used were not as ripe as they should have been. Tomorrow I will try to add almond butter on it for breakfast and see how that is! I will keep you posted. See you later this week for a workout!

Grapefruit too bitter? Try this!

I'll admit it, I am not a fan of grapefruit. I always get annoyed when health magazines and websites tell us to eat grapefruit for breakfast. Like really? You want us to like the taste of grapefruit?!!

I was SO excited when I came across an article on how to take the bitterness out of grapefruit. Watch the video below as it shows you what to do! So easy, and it works! I now can enjoy grapefruit!

Tomato, basil, and mozzarella Frittata.

Now to the great frittata I made yesterday. I went to whole foods a couple days ago and picked up a fresh mozzarella ball and tomatoes. I knew I had a lot of basil in my fridge and did not want it to go bad, and what goes better with basil than mozzarella and tomatoes!? Yesterday morning I was so excited to make a beautiful tomato, basil, and mozzarella cheese Frittata.

PRE HEAT your oven to 350

First, I heated a pan with EVOO and garlic. Then I added diced tomatoes. I let it cook and continuously mixed for about 4 minutes. I mixed 5 eggs (for camera man and I) and added a tiny bit of water (makes the eggs fluffy!) and about 1/2 a cup of chopped FRESH basil, salt and pepper!

After the tomatoes were cooked enough I added in the egg and basil mixture. The pan is now set to low/medium heat. I let the egg mixture settle for about 1 minute in the pan.

After about a minute or two sitting on low heat I removed the pan from the stove top and moved it in to the oven. MAKE SURE that your pan can go in the oven before you do this!! I do not want your pan to melt!

I let the egg mixture sit in the oven for about 15-18 minutes. The length of time you let your eggs sit in the oven all depends on how well you like your eggs cooked. Take some peaks at it by looking through the oven, try not to open it, and you will know it is cooked when the sides start to puff up. Some people like the top a little runny, this is up to you.

Now comes the FRESH mozzarella  After about 13-15 minutes of your eggs in the oven you want to add some  slices of fresh mozzarella to the top. Open the oven and place the mozzarella slices randomly around the frittata, close the oven and let the cheese melt for a couple more minutes.

I accidentally bought whipped cream cheese!!!! Oh man!

Instead I topped my frittata off with some sliced avocado. It was delicious. The avocado gave the frtittata the creamyness it needed! Perfecto!

Pumpkin Protein Pankcakes

Most of my clients are away for the holidays/New Year, so it is a very slow time of year for me. I am not complaining  and am actually embracing the time I have for myself. I will be able to blog, work out class formats, make videos, and COOK! I will say it. I am NOT a good cook. I try, I experiment, but I am really not that great. My mom and dad are both great cooks, and both my parents agree that my mom used to stink. So, I still have a chance.

My camera man is very critical of everything I make. Rarely does he say something is "GREAT". So when he says something is good, I know he means it. He always jokes that he is going to send me to cooking school. He says it so much that I am starting to think he is serious.

I woke up early this morning with a craving for pancakes. I remembered a friend/student of mine talking about  Carrots 'N' Cake Pumpkin Protein Pancakes, and how she loved them! Tina, from Carrots 'N' Cake took my ZUMBA class at Equinox a little while back. TIna was so sweet and down to earth, I loved having her in class.

I searched her blog this morning for the famous "Pumpkin Protein Pancakes (Wicked Good)" recipe. I was nervous I was not going to have all the ingredients since I definitely need to do some major food shopping.

Luckily for me the list was short! Phew:

  • 2 tbsp canned pumpkin
  • 1/2 medium banana
  • 1 egg
  • 1 scoop vanilla protein powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp ground flaxseed meal

I changed a couple of things. I did not have nutmeg so I added a tiny bit of vanilla extract and some pumpkin pie spice. I also added a tablespoon of chia seeds into the mix.

My first attempt was a fail. I think my pan was too hot and I flipped too early. It was stuck to the pan and fell apart.

My second attempt was a success. It flipped easily and looked great. And the taste you ask? Delicious! I was surprised by these amazing little pancakes. They are "wicked good"!

I was at my friends house this past weekend and we made the most slammin' salad.

  • Spinach
  • shredded broccoli slaw
  • iceberg lettuce
  • corn
  • beans
  • tomatoes
  • avocado
  • cucumbers
  • and.... not so hard-boiled eggs

I took it upon myself to make them, telling her "I am so good at making boiled eggs". Turned out I was lying. I actually suck.

HERE IS THE RIGHT WAY: never again will you fail at boiled eggs:

1. Arrange eggs in a pot that is wide enough to allow a single layer of eggs.

2. Cover eggs by 1 inch with cool water.

3. Over medium heat, bring water just to a boil.

4. Remove pot from heat, COVER (that is where I went wrong) with a snug lid and set aside for 12 minutes. (if you want soft-boiled eggs just 3-5 minutes will do)

5. With a slotted spoon, transfer eggs to a bowl of ICE WATER, stirring gently to cool eggs down.

6. Once cool you can peel immediately, or store in the fridge!

ENJOY and never screw up your hard-boiled eggs again!

good morning oatmeal breakfast

1/2 - 3/4 cup Organic Old Fashioned Oats (Country Choice Trader Joes) 1/4 - 3/4 cup Vanilla Almond Milk ( Almond Breeze Trader Joes)

1 cup Water

2 generous tbs Protein Powder ( MET-Rx Pr0tein Plus Trader Joes)

1/2 organic Pink Lady Apple ( chopped)

Cinnamon to taste

____________________________________________________________________________________________

1.mix oats, protein powder and cinnamon

2. add water and mix

3. microwave for 2 minutes

4. Take out and mix. Add chopped apples.

5. microwave for 2 more minutes and mix

Next time:

If you like your oatmeal thicker add more oats.  If you prefer your oatmeal soupier add more almond milk or water .  Have fun with this recipe. I really never do it the same twice.  Add a different fruit? Put more almond milk? Different flavor protein powder?  Enjoy and keep dancing!
