Super Quick Homemade Pizza

 

First off, this pizza is NOT gluten or dairy free.

Secondly, it is so easy to make.

And lastly, it is crispy and delicious!  

(Gluten free?? Do not fret I'll have a gluten free pizza recipe up next week!) 

Ingredients:

  • 1.5 cups whole wheat white flour
  • 1/2 cup oat flour. I made my own- just take 1/2 cup of oats and blend them to make  flour!
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbs EVOO
  • 3/4 cup water

  Directions :

  • preheat oven to 450
  • mix together all dry ingredients : both flours, salt and baking soda
  • add in water and EVOO - mix until moistened - there may still be some dry flour floating around but don't worry you will get that mixed in the dough in your next step.
  • add a little flour to your table surface and dump out the "dough" mixture on top -  knead dough into a ball. You have two options:
  1. Wrap the dough ball tightly in plastic wrap and put in fridge to use later that day 
  2. Roll it out right then and there.  
  • Grab a rolling pin and make your pizza crust! I like to make mine pretty thin, but not so much that it falls apart. 
  • Spray down a baking sheet.
  • Place you crust on top of baking sheet and place in oven for 12-15 minutes (depending on how thin your crust is). It will get slightly golden brown around the edges. Take out tray and add your toppings. I kept it simple and added tomato sauce and cheese. Place back in oven for 10 minutes.
  • Top with some spices like oregano, chili flakes, and/or garlic powder. Add a fresh green like arugula or basil. Possibilities are endless!

  • Ezekiel bread ( My favorite is the sesame kind)
  • marinara sauce
  • tomatoes ( I used grape tomatoes, but you can use any kind. I like them small because it is easier to bite.)
  • chevre style goat cheese (I used one infused with tomato and basil. Found at WholeFoods.) 

Directions:

  • toast Ezekiel bread
  • take out of  toaster oven and put marina sauce, goat cheese, sliced tomatoes, and fresh basil
  • switch the oven to broil put the "pizza" back in the oven for 2 minutes ....and you are DONE! Do you have any "Pizza" recipes??

root vegetables galore

My mom once made this baked root vegetable dish, and it was quite awesome. Today we spent the morning together and decided to go to Russo's (an amazing produce place in Watertown, MA) and get everything we needed to make the "Root Vegetable Galore"!

Ingredients: (pictured from left to right)

  • parsnips (eh it was OK)
  • sweet potato
  • jicama (never baked it, but SO good!!)
  • carrots
  • turnips
  • celery root
  • beets
  • fingerling potatoes
  • kohlrabi (forgot to get in "root vegetable shot", but separate image  is down below)
  • garlic
  • onion
  • EVOO
  • salt and pepper
  • rosemary (optional)

directions:

  • pre-heat oven to 400 degrees
  • peel and wash vegetables (no need to peel fingerling potatoes)
  • cut vegetables into cubes ( not too small, cut the beets a little smaller as they usually take longer to cook)
  • cut onions into small slivers
  • peel garlic and keep whole
  • cover everything with  EVOO,  add salt and pepper to taste. Mix around to make sure all is coated *when it comes to the beets, mix them in a separate container, then add to the mixture. Beets will discolor everything!
  • place vegetables, onions and garlic on a large baking pan and spread out

  • bake at 400 degrees for about an hour. Mix around vegetables every 25 minutes. Each oven cooks differently, so use your own digression. Vegetables should be tender and delicious!  ENJOY!

Below we have kohlrabi. I have never cooked with this vegetable before, but it is great!

Make sure you take off the stems and peel before you cut it.
