Delicious healthy chocolate chip cookie

I love chocolate. I love dessert. I really do. So when Elise (from Lillybelle Foods) told me about her recipe for a healthier version of a chocolate chip cookie I was alllll about trying it.

Regardless of being considered more healthy, I LOVED IT ! Try it, and YOU tell me how amazing it is, k?

  • The only sweetener in the cookie is honey (and the chocolate chips)
  • No butter! We used only coconut oil

YUMMMMMMMMM

Ingredients:

½ c whole wheat flour

½ c almond meal

½ tsp baking powder

½ tsp salt

1  egg

2 T honey

1 ½ tsp vanilla

½ cup chocolate chips

1 T coconut oil, melted is ideal

2 T almond milk

Directions:

Combine all dry ingredients in a large bowl. Combine all wet ingredients in a smaller bowl. Add wet ingredients to dry and add chocolate chips. Bake at 350 for 10-12 minutes. Makes about 6 cookies.

For a vegan version, use 1 T ground flax seed +  3 T warm water instead of the egg, and use maple syrup instead of honey.

 

Wedding dress pick up!

Last Thursday I made my final trip to NYC to pick up my wedding dress. I was so nervous but so excited all at the same time.  I worked with the designer who made my dress, and I was so happy that it fit perfectly. The dress is not what I was thinking of getting AT ALL. So different from what I had originally wanted, but I couldn't be more happy While I was on my way to NYC I sent you all a video asking what YOU wanted your next workout to be.

I got a lot of great responses and you guys gave me a lot of ideas for new videos, so thank you!! I decided to do an inner thigh and abs video.

I also need your advice. I do not want to give too much information away but at some point either before or during the wedding I may wear a headpiece. Which one do you like more? Both head pieces are using the same flower, it is just the lace bands that are different styles. I bought the flower on Etsy and the lace in NYC!

Under 15 minute interval detox!

Elise from Lillybelle Foods came over to film and we actually ended up doing the workout TWICE because half way through the first time the memory card become "full", and we didn't realize that it had stopped recording!  (hence why we look so flustered!)

This is one huge reason why I wish I had a camera pro with me all the time!! Then I would not have to worry about recording and producing, just do the fun stuff like working out, sharing cool recipes with you and doing awesome product reviews. I am not the best when it comes to video, so this is not the first time something like this has happened. But I guess it just gives me a double workout...right?!

Raw mango pie - using only 4 foods

I had Jody over, from JoJo's Raw Kitchen and she introduced me to the most delicious and easy to make RAW pie.  When I think of dessert I think of chocolate. I am not much of a fruit and nut dessert girl. So when Jody mentioned mango pie, it was not my first choice, but now I have become officially obsessed! This is something that I could eat every day as a sweet treat and not feel bad about it. Seriously awesome.

Ingredients:

  • 1 cup almonds
  • 1 cup dates (take out the pits)
  • 1 mango
  • 1 banana

Directions:

In a food processor place almonds and chop until almost a powder. Add in dates and blend together until they form a paste. This will be your raw crust. Take out and place in a pie dish to make a crust. Press the paste down hard and form a base to your pie.

Cut up 1 mango and 1 banana. Place in food processor and and blend. This is going to be your "cream" part of the pie!

Pour the mango and banana mixture on top of your raw crust and place in the fridge for 10 minutes then serve. The pie stays good for 4-5 days. It might lose its bright yellow color, but it is still good to eat.

Some tips:

  • If your dates are hard soak them in water for about 30 minutes to soften
  • Your pie may crumble when you serve it. WHO CARES. Because it just tastes so good.
  • Make sure your crust is really stuck together and there are no holes.
  • If the almond/date crust is not sticking together add more dates to the mixture.

Walk, walk, and walk more

Image As if I do not say it enough. Walking is the BEST. Do it every day, 10,000 steps! I know when you are strapped to your desk it is hard to find the time. But make it happen. You will find your day more productive, your body more awake, and your mind more happy.
