Cauliflower “pizza”

I put “pizza” in quotes because my camera man said that you should not call something a pizza if you have to eat it with a fork and knife!

I emailed my camera man and told him we were having cauliflower pizza for dinner and he seamed very excited! Then I soon realized that he didn’t know that the cauliflower will actually act as the “dough” and not the topping! I kept this a secret until he came home. Whoops!

I have to say that this pizza is AWESOME. I love it. I got the recipe from a student of mine ( thanks YULIA) who says she makes it weekly. I can see why. It is filling and made with ALL veggies (and 2-3 eggs!) The recipe is easy to follow and it makes for a warm yummy dinner. The recipe below was enough for me and my camera man.

Ingredients :

-head of cauliflower

-2/3 eggs (depending on size of cauliflower)

-oregano

-red pepper flakes

-salt

-pepper

-goat cheese (topping)

-cherry tomatoes  (topping)

-pizza sauce  (topping)

-pesto (optional but so good) (topping)

-onions (topping)

-garlic (topping)

-peppers (topping)

-mushrooms (topping)

- any vegetables you want for your pizza topping

Equipment:
-food processor

-parchment/baking paper

Directions:

preheat oven to 475F

Cut up cauliflower head. Recipe says not to use the hard stem part, but I did and it worked out fine!

Put in food processor and pulse until looks like a cous-cous mixture.

Transport the cauliflower to a microwavable bowl. Microwave for 5 minutes. stir. microwave for 3 minutes.

Crack in 2/3 eggs. 1 egg per 2 cups of cauliflowers. Mix in with cauliflower mixture.

Stir in oregano and other favorite seasonings. I used salt, pepper, red pepper flakes and oregano. Don’t be afraid to add on the seasonings. This is what gives the dough some nice flavor!

Transport the ‘dough’ to the baking tray on top of the parchment paper. I made about 4 mini pizzas. About 5 inches wide. Do not make the pizza dough too thick. I would say about  1/4 -1/2 inch thich. You do not want it too thin or too thick.

Put in oven and bake for 15 minutes. ** Before I placed it in the oven I cut the parchment paper around each pizza. I found it easier to serve that way.

 

 

 

While the dough is cooking in the oven, cut up your veggies and cook them with garlic and oil. I used green peppers, tomatoes, garlic and mushrooms in coconut oil. I added salt and pepper to the veggies.

Take out the pizzas and now add the toppings. (onion, garlic, cherry tomatoes, goat cheese, meat, etc)

Put back in oven on BROIL for 5-7 minutes. And then you have your PIZZA!

** I only made this dish once, so next time I make it I will change things around a bit. One thing I will do is try to make the pizza dough thinner and cook it for longer.
