Thanks to my cousin Sara for inspiring this post. She has two adorable kids and an awesome husband and for dinner it can be hard to please everyone in the family. BUT I think this may be a solution.
I tested this recipe out on my wonderful and very critical camera man. And HE LIKED IT!
I made him very special chicken nuggets! We had a salad on the side that included mixed greens, cucumbers, beets, hearts of palm and brocco sprouts. Camera man dipped his chicken fingers in ketchup (he ate his salad after), while I had mine on top of my salad. The chicken fingers were crispy and juicy and really yummy.
Ingredients:
2 boneless skinless chicken breast
3 TBS of EVOO in a separate bowl (you want enough to coat all of the chicken)
1 C Panko bread crumbs
grated parmesan cheese
herbs de provence, Mrs. Dash, salt and pepper to taste (you can choose any dry herbs you want)
Directions:
Preheat oven to 425 and spray a large baking sheet
Cut the chicken into square chunks that resemble chicken nuggets.
You will have 2 bowls: One with EVOO and the other with your dry ingredients of your breadcrumb, salt, pepper, herbs, Mrs. Dash, and parmesan cheese.
Place a few pieces of chicken in the EVOO bowl and coat them. Then transfer them to the breadcrumbs bowl and coat them with the dry ingredients.
Place them on the baking sheet, and repeat.
When all chicken is on the sheet lightly spray them with a bit of EVOO spray, and finish off with a LIGHT coat of fresh grated parmesan cheese (optional).
Place in oven for 10 minutes- flip them and bake another 8 minutes. You can always cut the chicken after you flip them to see if they are cooked. For the last minute broil the chicken nuggets to give them a little crisp.

TIP: Have your kids help make this dinner. Have one be in charge of coating the chicken in the EVOO and one be in charge of the breadcrumb coating.
