Orzo Summer Salad Recipe

Today was the first time I wore shorts this year! I was excited to bust out the shorts to celebrate this awesome weather!

I was on my way to the market and remembered my mom talking about a great summer fresh orzo recipe. I gave her a call and asked her how to make the salad.  The funny thing about my mom is that she rarely gives me measurements unless I ask, and when I do ask I think she is making it up most of the time. I guess when you cook a lot you "just know". So for this recipe I did my own measurements! If you love lemon add more lemon if you don't love mint add less mint. Make it your own. I know it will be delicious every way!

 

Ingredients:

Half box of orzo

mint about 1/4 cup chopped

1 large lemon juiced

2 tbs EVOO

1 medium sized cucumber

1/4 to 1/3  cup feta cheese

 

Directions:

Cook Orzo to a little al dente. Chop cucumber and mint. After orzo is cooked and has cooled off mix with the lemon juice and EVOO. Add in feta, cucumbers and mint. Mix and enjoy. Stores well in fridge. Great snack for the week!
